How does the novice tell St Augustine from Bahia or Floratam? Does Scotts weed and feed work on every type? I live in central Florida. Or what should I use?

Any weed and feed product works equally poorly on every type of grass. A MUCH better way to fertilize and kill weeds is to fertilize first (pick your time) and follow up 2 weeks later with a spot spray of any weeds you are concerned about. Weeds die much better when they are actively growing. Fertilizing them first will get them growing and ready to kill.
Foratam is a variety of St Augustine developed jointly by the Texas A&M University (TAM) and some university in Florida (FLORA).
