I have emerald Zoysia lawn in Central NC, and I’m thinking about overseeding it with Perennial Ryegrass for winter coverage…

Go for it. Zoysia will choke out the rye grass in the summer. We did this in Alabama then realized we had to mow in the winter and quit (none of us liked mowing). Once we tossed about 3 handfulls of rye grass out. It gave the yard a little color (very thin) but wasn’t enough to need mowing but once or twice.

yeah, you’ll need to follow normal seeding practices with a spreader- in texas we would use around 8 pounds of perennial ryeseed per 1000 sq. ft. into the zoysia. dethatching may be necessary depending upon the age of the lawn- it’s a good thing to do for winter color.
