Novice grass grower

I need to cover about 3/4acre of rough ground with grass in the southwest of France with the intention of leaving it to some pet goats/sheep to keep mown.I only want an orchard type finish nothing too prestigious looking.I`ve heard that Canada green and Velvet green would suit me down there. Can i just sow it straight down without the bother of having to prepare the ground first? Is it ok to sow it while the goats start on the weeds?
