How can you differentiate between Floratam and the other varieties of St. Augusstine? We just moved into a house with an established lawn of St. Augustine but don’t know what it is.

No sure you’ll be able to tell by looking. However, some FLORATAM clues:–Redish colored stolons/runners–Poor shade performance–course texture–your location. FLORATAM is not cold tolerant; therefore if you are in north Florida/Texas or southern parts of other gulf coast states and lawn has survived more than a couple of winters you probably don’t have FLORATAM
Only real way to know is pay [ at least a zillion dolars]some PhD at your nearest university to analyze a sample!
